Vegan French Toast

As a woman treated for insulin resistance before pregnancy with berberine, this is music to my ears. I can’t take berberine while pregnant and would love to keep my insulin levels continuously dropping. I know many foods can aid with this, but finding out that one of the items on that food list adds so much flavor to the mix is win-win. When blood-sugar levels are stable, my creativity and energy are at a much happier place. So you see this is why these vegan french toasts are high on the list of weekend treats ha!

We used Saigon cinnamon but learned Ceylon cinnamon is considered true cinnamon. They come from different trees and while Saigon cinnamon is high in concentration of essential oils, Ceylon cinnamon seemingly regarded as safer due to the lack of coumarin. Coumarin is a blood thinner known to cause liver damage and increase the risk of cancer. Saigon cinnamon may have a more potent flavor, but we found this lesson so helpful to know in the realm of health & wellness. You can read more about this here.

2 Tbsp of Chickpea Brine (Liquid from Canned Chickpeas)

1 Tsp Vanilla Extract

2 Tbsp Cinnamon

2 Tsp Nutmeg

1 Cup Coconut Milk (Or Nut Milk of Choice) (+)

Vegan Butter (+)

Brioche Bread


Banana for Topping

Raw Pecans

Vegan Whip Cream (+)

Syrup (+)

*Will need whisk


Prep time is approx. 5 minutes. Cooking will take about 30-35 minutes dependent on your bread preference. Makes about 2 servings.

Step One Warm a non-stick pan on med/low heat with a few pats of vegan butter.

Step Two In a large bowl mix Chickpea Brine, Vanilla Extract, Cinnamon, Nutmeg, and Coconut Milk with a whisk until well blended. It’s okay if some of the cinnamon settles at the top. (You can add more as needed.)

Step Three Dip your Brioche Bread in the mixture on both sides. Place into the pan and let cook on both sides for 10 minutes.

Step Four Amp up your heat, now you want to crisp the bread! Allow up to 5 minutes on each side on high heat. Add more vegan butter was needed and toss in your pecans to toast if you are using them as a topping. When both sides are crisp and ready, put on your plate and add all your toppings. Enjoy!
